- 3 large egg yolks
- 1 tablespoon Dijon mustard
- 25ml cider vinegar
- 100ml Thatchers Haze
- 300ml vegetable oil
- Pinch of Salt
- Whisk the egg yolks, vinegar, salt, mustard & 50ml of Thatchers Haze until thickened.
- Slowly add the oil whilst continuing to whisk.
- When all the oil has been added and emulsified, it should be quite thick.
- Slowly whisk in the remaining Haze until your desired thickness has been achieved.
- Serve & enjoy!
