This recipe uses:

Thatchers Haze

  • 3 large egg yolks
  • 1 tablespoon Dijon mustard
  • 25ml cider vinegar
  • 100ml Thatchers Haze
  • 300ml vegetable oil
  • Pinch of Salt
  1. Whisk the egg yolks, vinegar, salt, mustard & 50ml of Thatchers Haze until thickened.
  2. Slowly add the oil whilst continuing to whisk.
  3. When all the oil has been added and emulsified, it should be quite thick.
  4. Slowly whisk in the remaining Haze until your desired thickness has been achieved.
  5. Serve & enjoy!
